Serves 6: 1 English cucumber, diced; 1 large yellow bell pepper, diced; 2 pints heirloom cherry tomatoes, sliced in half; 1 cup kalamata olives, sliced; 1/2 red onion, diced; 1/2 pound goat feta cheese, 1/2” diced; 1/4 cup red wine vinegar; 2 tablespoon maple syrup or unpasteurized honey; 2 garlic cloves, minced; 1 tablespoon fresh basil, finely chopped; 1 teaspoon fresh rosemary, finely chopped; 1 teaspoon dried dill; 1/2 teaspoon dried oregano; 1 teaspoon Himalayan salt; 1/2 teaspoon freshly ground pepper

In a small bowl, combine the vinegar, maple syrup, garlic, basil, rosemary, dill, oregano, salt and whisk with a fork. In a large salad bowl, put the cucumber, pepper, tomatoes, onion and feta. Stir in the dressing and serve!
