Avocados are incredibly nutritious. They contain up to 20 vitamins and minerals, including vitamin K and folate, associated with lower risk of cardiovascular disease. They are rich in carotenoids and also consequently increase carotenoid absorption in foods like green leafy vegetables and great for weight management, because the oleic acid contributes to satiety. Lemon Guacamole on Crostini… also try using a cucumber slice instead of crostini. A way to cut down on carbohydrates! I give my guests a choice. This appetizer is always a big hit. 

Serves 6-8 people: 6 large avocados mashed; 2 tablespoons 2 red wine vinegar; 1 small red onion, finely diced; 1/2 cup cilantro, finely chopped; 1 tablespoon lemon zest; Himalayan salt and hot sauce to taste.; two cucumbers sliced 1/4″ thick; and 24 crostini for guest choice; 1/2 cup goat feta, crumbled; 6 large black olives, sliced.

Slice the avocados in half, discard the pit. Scoop out of the shell with a spoon and place in a bowl. Add the red wine vinegar immediately and use a fork to mash to desired consistency. Add chopped onion, cilantro, lemon zest. Salt to taste. Add hot sauce.

Spread the guacamole on crostini. Sprinkle a little goat feta, add half a cherry tomato, and a slice of black olive. Serve the remaining guacamole in a bowl with the sliced cucumbers. Enjoy!
