Avocados are incredibly nutritious. They contain up to 20 vitamins and minerals, including vitamin K and folate, associated with lower risk of cardiovascular disease. Lemon Guacamole on Crostini… also try using a cucumber slice instead of crostini. A way to cut down on carbohydrates! I give my guests a choice. This appetizer is always a big hit. 

Serves 6-8 people: 6 large avocados mashed; 2 tablespoons 2 red wine vinegar; 1 small red onion, finely diced; 1/2 cup cilantro, finely chopped; 1 tablespoon lemon zest; Himalayan salt and hot sauce to taste.; two cucumbers sliced 1/4″ thick; and 24 crostini for guest choice; 1/2 cup goat feta, crumbled; 6 large black olives, sliced.

Slice the avocados in half, discard the pit. Scoop out of the shell with a spoon and place in a bowl. Add the red wine vinegar immediately and use a fork to mash to desired consistency. Add chopped onion, cilantro, lemon zest. Salt to taste. Add hot sauce.

Spread the guacamole on crostini. Sprinkle a little goat feta, add half a cherry tomato, and a slice of black olive. Serve the remaining guacamole in a bowl with the sliced cucumbers. Enjoy!
