An ideal, ‘on board’ ship, cooling, simple recipe. Origins smack of cruising in the South Pacific! There one can take every advantage of plentiful local fresh mangos, and organic. They are full of nutrients and healthy!

This mango fruit now personally really endorse.

Particularly that it contains vitamins K.  A ‘necessary’ if it happens to be K2 and we want to maximize optimal vitamin D metabolism.

Also vitamin K generally known for its ability to ward off macular degeneration, an increasing age risk factor!

But even use unripeMango, or alternatively pre-cook and then used as a Reconstituted Starch.

This is similar to the Banana Recipe that is up on this WEB. Such a slight adaptation is sometimes fun for experimention!

This a summer favourite at Tofino’s Middle Beach Lodge. Mango Avocado Heirloom Salad.

Mango Avocado Heirloom Salad, with Shaved Zucchini, adapted to the West Coast climate by adding spicy French Dijon. This provides heat. A touch of aged balsamic vinegar from Vancouver Island Venturi-Schulz winery, fresh basil from the kitchen garden, and presto:

Serving for four:
1 tablespoon aged balsamic vinegar; 1 tablespoon Dijon mustard; 1 tablespoon maple syrup; zest of a lime; 1 tablespoon fresh basil, finely chopped;  2 large mangos, cubed; 2 avocados, cubed; 3 cups heirloom cherry tomatoes, sliced lengthwise; 1/2 small red onion, diced; large zucchini, shaved; Himalayan salt and freshly cracked pepper to taste.
In a large bowl, whisk together the vinegar, Dijon mustard, maple syrup, basil and lime zest. Toss in mangoes, tomatoes, avocados, and diced red onion. Season to taste. Finely shave the zucchini, using a mandolin or a carrot peeler, lay on a large serving platter. Place salad in the centre, and it’s ready to serve!

Nothing better than to see this Mango Avocado Heirloom Salad out on the salad table. incidentally along with other great salads! In the summer the evenings are long and provides afterwards a great opportunity to amble or walk those Tofino beaches!

It is amazing how in just a few days one sets into a healthy routine! Personally, always find time flies in Tofino. Start the day with a workout in the Middle Beach Gym if you are up to it.
