    Chocolate usually contains around 50% fat and 50% carbohydrate. Some say at this balance, brain chemicals are at optimum for a positive euphoric mood! But caution! the reality is that the preferred chocolate expression health wise is…the darker the better! Avoid the light chocolate that has the drawback of carbs! AND the less of those that are effectively sugars, the better! Note this recipe is DARK CHOCOLATE! Eating releases endorphins, largely responsible for our sense of pleasure. How better a way to finish a good meal than with chocolate fondue and fresh fruits, almonds and berries? This dessert seems so healthy that perhaps you could eat it not only for dessert, but snacks or even breakfast.     There are always menu choices.. But now for Easter! Chocolate Almond Fondue with Fruit and Berries?

    For 4 to 6 people: 2 cups dark chocolate; 1/2 cup almond milk; 1 tablespoon coconut oil; 1 teaspoon vanilla extract; 1/4 teaspoon of Himalayan salt; 2 cups sliced strawberries or other berries; 1 mango, peeled and sliced; 2 peaches, sliced; 1 banana, sliced; 2 cups pineapple, peeled and sliced; 1 cup whole almonds. In a pot, bring the almond milk, coconut oil, vanilla and salt to a boil. Reduce the heat, and add the dark chocolate until melted. Pour into small bowls, serve immediately with fresh fruit and almonds. For a summer picnic, put all the fruit and nuts on a large platter, and fondue in medium size glass bowl.
