Great factor Butter…does not change chemically with heat! I look at Saturated Fats as best Coconut, it contains medium chain fatty acids which has a dramatic health benefit with enabling metabolism using fats as a substitute for sugar metabolism in our brains. Much more about this in another article, as I believe this is another really powerful weapon to immediately fight that terrible now international calamity of Dementia and Alzheimer’s. Avocado also a perfect fat!! But Butter also does not change it’s constituency with heat…so clarifying it and making Hollandaise sauce is for me a tremendous plus!
This Hollandaise is made fast, great for adding to not just Eggs and Lox, but Hollandaise over Asparagus. Vegetables are really a treat…and the Egg Yolks great source of Protein…Hollandaise Sauce Magic!

One could say that our bodies have adapted to utilize all the good things that eggs contain. Which is almost every vitamin, and mineral the body needs..for instance it is a rare source of Vitamin D.
